Business Spotlight: KC’s Kitchen & Catering Co.

KC's KitchenWe’re so excited to spotlight Karina Coryell of KC’s Kitchen & Catering Co. as our first Business Spotlight. The Business Spotlight will be a regular feature on the Focus. It’s designed to bring attention to up and coming or other local businesses in the area that are doing cool things you might want to know about!

How long have you lived in PVB or Beaches area?  I moved her August 2008 from Atlanta, Ga and came to this area for job relocation with Whole Foods Market.  I am happy to be back in FL. (my roots, born in Miami, FL)

What is your favorite thing about PVB? Two things, the community and the beach!

What made you start KC’s Kitchen & Catering Co.?  I have a real passion for serving whole, simple, fresh food to go! I had a similar business in Atlanta, GA. and all my customers loved the service.  After talking to so many busy families and singles (including myself raising 3 children) I realized there was such a need for healthy, simple prepared family meals in this area.  So I created a business plan and, in October 2014,  I opened KC’s Kitchen & Catering Co,.

How long have you been doing KC’s Kitchen & Catering Co.? I have been in business since October 2014 and it has been great, continuing to grow weekly but off course would like to be a bit busier.  Tell all your friends, LOL.

What should people know about KC’s Kitchen & Catering Co.?  A couple of key points about our business. We serve all natural foods made from scratch, no artificial colorings or flavorings. We are determined to work with local farmers to bring the freshest ingredients to our menu.  We are a flexible company, working with KC’s Kitchen is like have your own personal chef.  Need dinner for 8 on Saturday night? We can do it!  We are not your typical catering co.  We can serve your needs from large events, graduation parties, baby shower to dinner for 6 🙂

What are your hobbies outside of your profession? I love going to the beach and hanging with my family and friends.  

If you could have lunch with anyone, who would it be and why? I would have lunch with Lori Greiner, one of the hosts from Shark Tank (one of my favorite programs).   I am an entrepreneur and would love to get her feedback for growth ideas for  KC’s Kitchen & Catering Co.

What was your favorite subject in school? My favorite subject in college was marketing and merchandising.  

What is your favorite football team?  Go Noles, FSU.  I really enjoy watching college football…but I will always be a supporter of our local team.  Go Jags!

What is your favorite book? I have not had much time to read in the past 7 months since I opened my business but I enjoyed this great book, “Have a Little Faith” by Mitch Albom.  

Favorite and least favorite trend in your business? Favorite first, being able to be so creative with my meals every week with local produce (buying from local farmers will be a trend to stay).  Least favorite, teenager clothing styles… I guess because I have three.  

If you can change one thing about Ponte Vedra, what would it be? A better road system, it feels like I go in a big circle sometimes 3 or 4 times a day.  Hahaha, I shouldn’t complain, I did move here from Atlanta.

Last time you laughed out loud uncontrollably? And why? Just recently with my girlfriends about nothing.  We were talking after an event and we were just laughing so hard.  We texted each other the next day and said how much we enjoy being together because of just being able to be ourselves and laugh!

Your suggestion for a Ponte Vedra mascot?  How about a WAVE ????
